Pastry cooking class with Thierry Mulhaupt

Thierry Mulhaupt is one of the big names of pastry cooking and is known for its Tartes folles, pies with unique flavors. I already told you about it in my list of the best pâtisseries in Colmar, but Mulhaupt is also present in Strasbourg. It is actually near Strasbourg, in Mundolsheim, that is located one of its fabrication workshop, which hosts pastry cooking classes. It is also possible to take classes in Colmar, but they are not taught by Thierry Mulhaupt himself, but by one of his head pastry chef, Laurent Gilg.

The pastry cooking classes by Thierry Mulhaupt have a lot of success, so remember to book several months in advance. I tried a class about gingerbread and Christmas Tarte folle (booked 6 months in advance, but I still had a bit of time) and then a King cake workshop organized for a few bloggers. Each time, I was really impressed by the quality of the class offered. People do appreciate it, as there were many people taking a 2nd or third class with Thierry Mulhaupt!

The classes take place on Saturdays afternoons, last for 3 hours and approach various themes (tarts, pastries, chocolates, macaroons…). The content of  the classes is very rich. Everyone receives recipe cards, as well as a pen to take notes. It’s very useful as  Thierry Mulhaupt gives a lot of tips and tricks and answers with patience to his students. You’ll come out of the workshop having learn a lot, even if you are pastry passionate with some experience (it is not my case, but I have asked!).

There is a snack in the middle of the class and it is obviously a delight. I had a divine hot chocolate, as well as a dried fruits financier. The workshop closes with a tasting of the pastries you made. You will go home with your creations in a box, already cooked or to be cooked at home if necessary (for King cake for example, as it has to rest until the next day). A guaranteed success when you go home!

I liked

  • Richness of the content of the classes: recipes, tips and tricks
  • Availability of Thierry Mulhaupt to answer questions
  • Spacious and pleasant laboratory

I liked a little less

  • The price of success: you have to book a very long time in advance!
